Christmas Recipes Quick and Easy

By Roy Thomsitt

Whether you're having a quiet celebration at home, or having all of the family along with friends over for the holidays, here are three quick and easy Christmas recipes you can make for everyone to enjoy this year.

Basic Cookie Dough Recipe

This basic recipe for cookie dough is perfect for the holidays as you can use cookie cutters to make any type of shapes along with colored frosting and extra goodies like candies and other sweet treats for decoration. You will need the following ingredients:

1 cup or 2 sticks of softened butter

3/4 cup brown sugar, lightly packed

3/4 cup granulated sugar

1/2 teaspoon baking soda

1/4 teaspoon salt

2 eggs

1 teaspoon vanilla

2 and 1/2 cups all-purpose flour

cookie cutters

decorative gel or frosting

edible embellishments

In a large mixing bowl, combine the butter, both sugars, baking soda, and the salt and beat with a mixer for three minutes on medium to high speed. Next, blend in the eggs and the vanilla extract before adding the flour gradually while reducing the mixer's speed. Refrigerate for an hour or two as dough that's thoroughly chilled is much easier to work with, then roll it out and cut into shapes. Bake the dough at a temperature of 375 degrees for 10 to 12 minutes on plain cookie sheets.

Enjoy them plain dipped in coffee, tea, or milk, or turn them into tiny works of art with frostings and edible embellishments.

Christmas Cranberry Salad

Cranberries are often served for the holidays, whether they're jellied, whole, or used in a variety of delicious recipes. Here's a really easy one for a Christmas cranberry salad that makes for a great dessert, the ingredients you will need are:

1 package strawberry flavored gelatin

1 package raspberry flavored gelatin

1 cup sugar

2 cups boiling water

2 cups ground cranberries

2 cups diced apples (or other fruit if you prefer)

1 cup shredded coconut

1 cup chopped walnuts

After the water boils, add both gelatin packages and the sugar to a large bowl and chill in the refrigerator until only slightly firm. Blend in the rest of the ingredients and pour the mixture into a decorative mold or pan. Refrigerate again until completely set and serve.

Tasty Egg Nog

No relaxing Christmas is ever complete without a glass of delicious egg nog. Here's what you'll need to make two servings of this traditional holiday drink:

1 egg

2 cups milk

4 tablespoons sugar

1 teaspoon nutmeg

1/2 teaspoon vanilla

1/2 teaspoon salt

First, in a mixing bowl, preferably one that's easy to pour from, beat the egg until it's fluffy. Next, add the milk, sugar, vanilla and salt and continue beating until well blended. Sprinkle the nutmeg on the top and completely chill before serving. For a truly flavorful glass of egg nog, add extras such as rum, cinnamon, grated chocolate, or even whipped cream. Then, go and sit and sip by the window and admire all that Christmas yard decor you set up earlier to light up the holiday season.
